New 'nose to tail' restaurant opens in Old Port

Said to be Maine's first Korean barbecue restaurant, N To Tail in Portland features nose-to-tail cuisine.
The owners of Fuji Restaurant at in Portland’s Old Port reopened this week as a Korean fusion and barbecue restaurant, N To Tail.
Fuji closed last fall for the renovation of the 29 Exchange St. space, and the new restaurant is Maine’s first and only such Korean restaurant, according to a news release.
The name of the new restaurant is a play on “nose to tail” — which emphasizes that all cuts of meat from the animal will be used. Owner Jung Hur runs a farm in Auburn, and will use farm fresh seasonal vegetables, as well as meats and fresh Maine seafood, the release said.
It taps into a growing market for Korean barbecue.
“Portland has unbelievable diversity and quality of food and beverage options from all over the world but Korean barbecue was missing,” Hur said in the release. “I believe patrons will enjoy the interactive and family-style dining experience that Korean Barbecue brings and which continues to be a lively food trend in cities like New York, Chicago and Los Angeles, and across the country. Portland is such a revolutionary food town, and it makes sense we should have the first Korean barbecue restaurant in northern New England.”
Patrons themselves will grill the meat, seafood and vegetables on natural gas grills built directly into the tabletops, supervised by servers. The restaurant also includes a sake and soju bar featuring Asian beers and spirits, emphasizing Korea-imported goods; and two Hibachi tables.
Fuji restaurant operated more than 20 years.
