Opening of Scratch Baking’s toast bar a ‘dream for 12 years’
Regular bars are so passé. Toast bars? That’s where Bob Johnson, co-owner of the South Portland-based Scratch Baking Co., and his business partner Allison Reid see the future.
“Toast is my go-to comfort food and always has been,” Reid told the Bangor Daily News. “Opening a toast bar has been my dream for 12 years.”
The duo will open the toast bar and its expanded bagel- and bread-baking operations at a former Getty station at Sawyer and Broadway, a half mile from Scratch’s original location at 416 Preble St.
It will soon resemble more toaster than auto shop — Johnson told the BDN the building will soon be outfitted with black handles to complete its aesthetic conversion.
While Scratch’s toast bar will be serving up traditional café fare, including coffee from local roasters including Rwanda Bean and Speckled Ax when it opens in October, the use of communal seating and the lack of Wi-Fi solidifies that it won’t be your run-of-the-mill java joint.
“It’s not a breakfast joint. It’s not a lunch cafe,” Reid told the BDN.
