Yarmouth pub drafts Portland chefs for down home classics

Two co-chefs with experience at Portland culinary hotspots are partnering with the owner of the soon-to-be-opened The Owl & Elm to bring a modern spin to the village pub in Yarmouth.

The Bangor Daily News spoke to Caitlin Henningsen, the New Jersey native with 20 years of experience in the restaurant industry, who is preparing to open the 900-square-foot space at 365 Main St. on Tuesday, Sept. 20. The restaurant will be next door to the refurbished Handy’s, which includes OTTO Pizza.

“This is a family-friendly pub. A place where everyone can feel welcome,” Henningsen, told the BDN. “The neighborhood needed something like this.”

Part of Henningsen’s efforts to make everyone feel welcome is drafting co-chefs Rocco Marzilli and Matthew Dorr, who worked at Hot Suppah and Nosh in Portland, to craft a menu that is expected to include down home classics, including chicken pot pie, according to the BDN.

Libations will also be served at The Owl & Elm, including whiskey sours and “a rotating, evolving tequila drink,” according to the BDN.
