Yarmouth's Brickyard Hollow Brewing on track to open in spring or early summer

YARMOUTH — A brew pub at the site of a former dry-cleaning building on the corner of Main and Cleaves streets is on track to open this spring, complete with head brewer.

Plans for Brickyard Hollow Brewing Co., a small-batch craft brewery, were approved last June and renovations are underway at the 2,100-square[-foot building that housed Anthony’s Cleaners.

The plans were before the Planning Board Wednesday to remove a dormer that was causing issues with brewery stacks and placement of equipment, as well as structural concerns, according to the board agenda.

The change hasn’t slowed plans, though.

“As of now an exact opening date will depend on when our brewing equipment arrives, but as of now we are still hoping late spring and before summer,” said Tyler Havrilko, head brewer.

Havrilko is leaving Oxbow Brewing Co. to take the post, the brewery announced in February.

Brickyard Hollow is owned by Brad Moll and Frank Grondin, both of Yarmouth, and will be the town’s first craft brewery. It will also have a full bar and food and a covered outdoor beer garden. The name comes from early in the village's history, when a depression in the land was filled and became a town gathering place.

Havrilko said Tuesday that he will make a wide range of beers and get creative with different styles with the brewery’s five-barrel system.

He said he’ll definitely be offering the types of beer people like to drink , but through his own vision of what those styles should be.

“I want to bring balanced beers that pair well with food, while also having the freedom to experiment with different recipes/ingredients/flavor profiles.”

He said that the beauty of a brewpub “is the ability to do different things all the time.”

“But I want to make sure there is a core of balanced, flavorful and interesting beers that may reflect seasonal influence,” he said.

Havrilko is leaving Oxbow Brewing, where he worked for more than four years. He started as an entry-level cellar worker, but worked his way up to lead brewer and production manager of the warehouse.

Moll told Mainebiz last year that the owners “really wanted to bring a unique, hyperlocal craft beer concept to Yarmouth, a gathering place for friends and families. Our vision for Brickyard Hollow is to become a gathering place for community events."
