Augusta-based Cushnoc Brewing plans to expand into Waterville

Augusta's Cushnoc Brewing Co. plans to expand to downtown Waterville, with plans to open a restaurant and bar called Cushnoc Cantina.

It will occupy a little over 3,000 square feet on the ground floor of the Bill & Joan Alfond Main Street Commons, a Colby College building at 150 Main St. that houses more than 200 students, faculty and staff. 

In Augusta, Cushnoc Brewing, which launched in 2018, has a restaurant, an annex and a tasting room for private events. 

The expansion up I-95 is a natural move, the brewery's co-founder said. 

“Our relationships in Waterville are extremely important to us, and we feel this move can continue to build on them,” said Tobias Parkhurst, co-founder of Cushnoc Brewing. “We don’t just want the expansion to be about selling beer. Rather, we want to be a community member that’s involved with the people and businesses that we know well and very much appreciate.

"It’s a very thoughtful move into a city that really means a lot to us.”

Cushnoc Cantina will seat up to 80 people and have a full kitchen and bar, offering beer, tequilas, mezcals and cocktails. Menu items will include tacos and other fare, with an emphasis on fresh, local ingredients.

“We’re really stoked about coming to Waterville and firmly believe we will complement the dynamic food and beverage scene that’s happening in the city,” said Parkhurst.  “Our goal is to not only provide great beer and tacos but also partner with the other terrific restaurants and bars in the city.”

The new restaurant and bar will feature some of the brewery’s signature beers and serve as a hub for developing and testing new brews. The brewery also hopes to partner with some of the restaurants and bars in Waterville to create unique beers for them. 

Cushnoc Cantina will open for lunch and dinner seven days a week. While the exact number of employees has yet to be determined, Cushnoc plans to begin hiring this summer.
