While the state of the economy and the brewing industry remains uncertain, the CEO of Baxter Brewing Co., based in Lewiston, says it's important to stay viable and adaptable — a mindset that has allowed her to open a new pop-up location at Portland's Thompson’s Point.
It opens today, Friday, Aug. 15.
The Baxter Outpost is a temporary space at Thompson’s Point, created in partnership with the management team there. There's no exact timeline for how long the brewery will be there.
Thompson's Point has a summertime outdoor concert venue and wintertime ice skating, as well as other nightspots like Bissell Bros. Brewing and Leisure Time Cocktail Co.
Jenn Lever, CEO of Baxter Brewing and a 2022 Mainebiz 40 Under 40, said running a brewery or restaurant today is harder than ever.
"Despite the difficulties, we remain optimistic about what lies ahead," Lever told Mainebiz. "Our focus is on creating high-quality experiences, innovating thoughtfully, diversifying our offerings and evolving with our guests’ tastes. Learning from fellow business owners and experimenting along the way keeps us motivated — and most importantly, it allows us to proudly support and represent Maine-made products while helping small businesses thrive."
The idea for the pop-up location came after brainstorming ways to collaborate. She said they envisioned a space where a show could become more than just an evening — where friends could gather for games, conversation and their favorite beverages.
“This space is a chance for locals and visitors to experience Baxter Brewing in a fresh, exciting way,” said Lever. "Thompson’s Point pulses with energy — from concerts to comedy shows — and the Baxter Outpost is our way of turning an evening into a day with friends."
Lever said the Baxter Outpost offers a relaxed lounge atmosphere with comfortable seating, outdoor views, and an adventurous, community-first vibe.
"We were fortunate that the space already had a beautiful aesthetic and our work focused on curating it to showcase some of our favorite historical elements from our Lewiston roots — from the exposed brick to honoring a space where people make things," said Lever. "We want to bring the Baxter feeling of connection, fun and quality to a new audience. Every detail was intentional because we believe that the little things matter. Every touchpoint is an opportunity to represent who we are and what we stand for."
Guests can sample Baxter’s flagship beers, seltzers, non-alcoholic offerings and the new Delta-9 lineup, including fan favorites like Stowaway IPA and Coastal Haze, alongside limited releases and small-batch brews rarely found outside the Lewiston brewery.
