LB Mini-Mart, the modern convenience store brand that is an offshoot of the wellness-focused eatery LB Kitchen will be opening two locations in Portland’s West End and East End.
Owners Bryna Gootkind and chef Lee Farrington are now working to open a second location at 235 Vaughan St., formerly the Vaughan Street Variety and Otherside Deli. Work in the space began in June with Mey & Co. Interior Design, with a projected opening in the fall.
In Portland, Gootkind and Farrington own and operate the LB Kitchen Café and Mini-Mart, which opened in 2017 on Congress Street. Last year, it moved a few doors away to its current location, 255 Congress St. LB Kitchen opened its first convenience store brand location in Westbrook in March, at the Rock Row mixed-use development.
When it launches this fall, the convenience store will offer a variety of items, including salads, sandwiches, snacks, wellness products, wine, beer and non-alcoholic beverages. There will also be a coffee bar that serves espresso-based drinks as well as LB’s lattes, bone broth, smoothies and slushies.
"These new locations are a reflection of the growing demand for healthy, accessible food and the continued evolution of our mission to support everyday wellness in our community," said Farrington. "We think of ourselves as the new corner store or gas station convenience store — when you want something quick, but at LB Mini-Mart, we can satisfy the convenience without sacrificing delicious, more intentional choices.”
In mid-2026, the second location is expected to open at 251 Congress St., expanding into the space adjacent to their current cafe on Congress Street. Gootkind and Farrington plan to relocate their in-store market into the new storefront, which will allow for more seating inside the cafe.
