Artisan grilled cheese restaurant will expand to Rock Row in Westbrook

Cheese Louise, a restaurant chain specializing in artisan grilled cheese sandwiches, plans to open its fourth location — at Westbrook’s Rock Row development.

Cheese Louise was founded by James Gaudreault, Ian Lubkin and Bryce Harrison as a food truck in New Hampshire. The business opened a Portland restaurant, at 363 Fore St. in the Old Port, in 2021. There are also locations in Conway, N.H., and Portsmouth, N.H.

The Rock Row location is slated to open in 2025.

“We pride ourselves in providing phenomenal grilled cheese for everyone while making a difference in our communities,” said Harrison. “Guests want more from a restaurant than just great food. We are striving to make Cheese Louise an example of how restaurants have the power to make an impact. From financially supporting charities in our communities to empowering the youth with a foundational job experience.”

The Rock Row location will offer its take on a classic sandwich, with offerings such as the Vermonter and the Porky-Pine, a grilled cheese with pulled pork, pineapple and goat cheese. Patrons can also grab a craft beer, cocktails and sides like tomato soup, house-made pickles, macaroni and cheese, or salads.

The restaurant will join a mix of local and national chain eateries at Rock Row, including Big Fin Poke, Chick-Fil-A, Crumble Cookie, Cow Bell sports bar, Firehouse Subs and Quarryside, a beer garden and event space at Rock Row, which opened in August featuring Lone Pine Brewing.

Rock Row is also home to Market Basket supermarket and sporting goods retailer REI.

Rock Row is a $600 million, 110-acre mixed-use development, that features an open-air retail and entertainment district that offers inviting events, shops, restaurants and health and wellness services.
